Villa Betulia Micro-Lot Coffee
Coffee is what excites Luis Calderon most, which is why he is so dedicated to preserving his father’s legacy of quality coffee production. This tradition is now being passed to Luis’ son, Yeison, who is taking up the mantle of managing the estate alongside his father. Villa Betulia sits high in the mountains of Huila at 1550 masl. On the idyllic farm over 20 coffee varieties flourish, many of them highly sought-after, temperamental plants, like geisha and pink bourbon.
Quality and variety are strong themes at Villa Betulia, and this double-fermentation honey-processed coffee is an ode to both. First, ripe cherries were fermented in plastic bags for 24-48 hours, then depulped and fermented again for another 48 hours in closed plastic containers. After the double fermentation, the beans are mechanically dried with close attention paid to controlling Brix degrees, temperature, and pH.
